Thanks for the tip Ruth and well done in the GBBO!. I normally start my Christmas cake fruit when the kids go back to sohocl and do the puddings in the October half term, that way the kids can help mix the fruit they love it! I always soak my fruit as it makes it plump and juicy and makes the cake moist, but normally for a couple of days. Great idea! I will give it a try and can't wait for the rest of the recipe!
